Avarekalu Kootu

This recipe was given to me by Mrs. Uma Vyas. Thank you aunty for this wonderful delicacy :). Avarekalu is also known as Hyacinth beans/SurtiPapdi.

Ingredients

Vegetables required

  • Potatoes
  • Brinjal
  • Avirekalu
  • Seeme badnekai

For masala

  • Urad dal - 2 tsp
  • Chana dal - 1 tsp
  • Coriander seeds/Dhaniya - 1 tsp
  • Cumin seeds/Jeera - 2 tsp
  • Dalchini - 1"
  • Green/red chilli - as per taste
  • Dry coconut

Preparation method

  1. Lightly cook the vegetables (one whistle if you are using a pressure cooker)
  2. Roast the above masala ingredients and grind to a fine paste. Add water as required.
  3. Head oil in a pan and add the vegetables and saute for a few seconds.
  4. Add the ground masala paste and cook with lid for about 5-7 minutes or until the oil leaves the edges of the pan.
  5. Cook for few more minutes, if required.

This dish is a delicacy and can be eaten with hot rice and ghee, or with chapatis too.
