Pizza spread

I have been wanting to make the tomato spread for the pizza topping for quite long and here goes the simple recipe...

Ingredients

  • Tomatoes, ripe - 5-6, large
  • Italian seasoning - 1 tsp
  • Garlic pods - 3, finely chopped
  • Chilli flakes - 1 tsp
  • Salt - 1 pinch
  • Olive oil - 1 tsp

Preparation method

  1. Wash, cut the tomatoes and finely chop or blend them coarsely in a blender. Keep this aside.
  2. Heat oil in a pan and add the chopped garlic, chilli flakes, italian seasoning and the blended tomato.
  3. Boil it until the water evaporates and the mixtures is easy to spread on the pizza base.
  4. Turn off the heat and cool the mixture.

Peanut butter

Ingredients

  • Peanuts - 150 gms or 1 cup
  • Sugar - 1 tsp
  • Salt - 1 pinch
  • Peanut/Olive oil - 1 tsp

Preparation method

  1. Heat a pan and roast the peanuts well. Allow it to cool.
  2. Take a blender, add the roasted and cooled peanuts, sugar, salt and oil.
  3. Blend it until a smooth paste.
  4. Store this in an air-tight container and spread it on bread or tortillas/chapatis/.

The peanuts on grinding will leave oil, so do not add more than 1 tsp of oil. This oil is used only to bind the peanut powder together and get the required consistency.
