Huli pudi/Sambhar powder
Ingredients
- Coriander seeds/Dhaniya - 1 cup
- Dry red chillies - 2 cups
- Fenugreek seeds/Methi - 1/2 spoon
- Urad dal - 1 teaspoon
- Chana dal - 1 teaspoon
- Dry coconut - 1/2 - 1/4 cup
- Dalchini - 1" stick
Preparation method
Dry roast above ingredients and grind them to a consistent and almost fine powder.
Baath powder
(for Vangi (brinjal), capsicum, mixed vegetable baath)
Ingredients
- Dhaniya - 2 tbsp
- Urad dal - 1 cup
- Cloves - 1
- Dalchini - 1"
- Cardamom - 1
- Dry red chillies/Mirchi - 4-5 or as per taste
- Fenugreek seeds/Methi - 1/4 tsp
- Cumin seeds/Jeera - 1/2 tsp
- Dry coconut - 1 tsp (optional)
Preparation method
Dry roast above ingredients and grind them to a consistent and almost fine powder.
Saaru pudi/Rasam powder
Home made powders are fresh, healthy, and easy to prepare. So, I prefer making most of them at home.
Ingredients
- Coriander seeds/Dhaniya - 1 cup
- Dry red chillies - 2 cups
- Pepper - 2-3 spoons
- Cumin seeds/Jeera - 1 teaspoon
- Fenugreek seeds/Methi - 1/2 teaspoon
- Toor dal - 1 teaspoon
- Oil - 1teaspoon (optional)
Preparation method
Dry roast above ingredients with 1 tsp oil and grind them to a consistent and almost fine powder.
Kootu powder
Ingredients
- Bengal gram (chana dal) - 1 tsp
- split black lentils (urad dal)- 1 teaspoon
- Dry red chillies - 4-5
- Pepper - 2-3 teaspoons
- Cumin seeds/Jeera - 1 teaspoon
- Fenugreek seeds/Methi - 1/4 teaspoon
- Oil - 1 teaspoon to roast(optional)
- Asafoetida - pinch
- Tamarind - small lemon size
- Dry coconut (grated) - 1-2 teaspoons
Preparation method
Dry roast above ingredients with oil and grind them to a consistent and almost fine powder.
Goddupitla powder
This is a tangy, spicy side dish. Tastes delicious with pongal, plain dal.
Ingredients
- Black pepper - 1 tbsp
- Dry red chillies - 1 tbsp
- Urad dal - 1 1/2 teaspoon
- Coriander seeds/Dhaniya - 1 tbsp
- Dry coconut - 2" piece
- Oil - 1teaspoon (optional)
Preparation method
Dry roast above ingredients with oil and grind them to a consistent and almost fine powder.
Chutney pudi/podi
Ingredients
- Urad dal - 1 cup
- Chana dal - 1 cup
- Coriander seeds/Dhaniya - 1 tbsp
- Dry coconut - 2" piece
- Mustard seeds - 1/2 tsp
- Cumin seeds/Jeera - 1/2 cup
- Methi - 1/4 spoon
- Dry red chillies - about 20 or as per taste
- Oil - 1 tsp
Preparation method
- Fry chana and urad dal and coarsely grind them.
- Keep it aside.
- Then, grind the remaining ingredients together and keep it aside.
- In a pan add oil, tamarind and roast for 1 or 2 minutes. Grind it with the remaining ingredients and add hing.
- Add the remaining oil (little at a time)and grind the coarse powder along with it.
- Add jagerry in the end.
Gojju pudi/podi
Ingredients
- Urad dal - 1 tbsp
- Chana dal - 1 tbsp
- Coriander seeds/Dhaniya - 1 tbsp
- Dry coconut - 2" piece
- Til/Sesame seeds - 1 tbsp
- Cumin seeds/Jeera - 1/2 tbsp
- Methi - 1/4 spoon
- Dry red chillies - about 8- 10 or as per taste
- Oil - 1 tsp
Preparation method
- Add oil to a wok and fry all the above ingredients, separately.
- Keep it aside to cool.
- Grind them together to a fine powder and keep it aside.
- Add this powder while making Gojju.
To increase the shelf-life, dry roast the above ingredients (without the oil) and store the powder in an air-tight container.
