Vegetable Fried Rice

Whenever I think of this dish, my mind instantly wanders on the streets of Himayathnagar, Hyderabad. Yes, those of you who have lived in Hyderabad will know what I am talking about! The one and only Minerva :) The fried rice and paneer butter masala served here is unmatched!
So, whenever I visit Hyderabad, I make it a point to have a meal with a standard menu - Paneer butter masala, naan/roti and fried rice. Simply delicious!!! Miss those days, when we went there with family, friends and cousins...


Ingredients

  • Jeera basmati rice - 1 1/2 cups, washed, drained
  • Carrots, beans and spring onions - 1 cup, very finely chopped
  • Water (to cook the rice) - 2 cups
  • Oil - 1 tsp
  • Soya sauce - 1 1/2 tsp
  • White vinegar - 1 tsp
  • Pepper powder - 1 tsp
  • Salt - to taste
  • Pressure cook the rice with 2 cups of water and a few drops of oil for 3 whistles and turn off the heat. Keep it aside to cool.

Preparation method

  1. Heat oil in a pan and add the finely chopped vegetables and saute.
  2. Add the soya sauce, vinegar, pepper powder, salt and mix well.
  3. Add the rice and saute on a high flame.

Preparation time - 45 mins

Serve hot with any side dish of your choice.

Vegetable Manchurian - Wet

Vegetable manchurian is a chinese dish, which is typically vegetable dumplings in sweet, sour, spicy, and tangy gravy. It can be served as a starter and also as a side-dish for fried rice.

This can be made in two ways: dry or, wet or gravy.



Ingredients

For manchurian

  • Carrot - 1/2 cup, finely chopped
  • Cabbage - 1 1/2 cups, finely shredded
  • French beans - 8-10, finely chopped
  • Garlic - 4-5 pods, finely chopped
  • Ginger - 1/2", finely chopped
  • Cornflour - 2 tsps
  • All purpose flour - 2 tsps
  • Salt - to taste
  • Oil - to deep fry

For the gravy

  • Red chilli sauce - 1 tsp
  • Cornflour - 1/2 tsp
  • Water - 1 tsp
  • Garlic - 1 tsp, finely chopped
  • Green chillies - 2, slit and finely chopped
  • Spring onions - 1/2 cup, finely chopped
  • Vinegar - 1 tsp
  • Soya sauce - 1-2 tsp, depending on the color
  • Salt - to taste
  • Coriander leaves - 2-3 tsp, finely chopped

Preparation method

  1. Shred all the vegetables, one chilli, garlic, and ginger.
  2. In a bowl, add the shredded veggies, red chilli sauce (optional), salt, cornflour, all purpose flour, and mix well. Let it set for a few minutes.
  3. Heat oil in a deep frying pan.
  4. Rolls the dough into even-sized balls and deep fry them until brown.
  5. In another pan, add a tsp of oil and heat it. Add the chillies, garlic, vinegar, soya sauce, spring onions, salt, and saute.
  6. Note: At this stage, you can serve manchurian as a starter.
  7. Add water to the cornflour and stir well to ensure there are no lumps. Add this to the pan and stir continuously, until the mixture slightly thickens.
  8. Add the fried manchurian balls to this gravy and stir well, until all the manchurian are coated with the gravy.
  9. Garnish with spring onions, coriander, and serve with fried rice!
