Avarekalu kootu
This recipe was given to me by Mrs. Uma Vyas. Thank you aunty for this wonderful delicacy :). Avarekalu is also known as Hyacinth beans/SurtiPapdi.
Ingredients
Vegetables required
- Potatoes
- Brinjal
- Avirekalu
- Seeme badnekai
For masala
- Urad dal - 2 tsp
- Chana dal - 1 tsp
- Coriander seeds/Dhaniya - 1 tsp
- Cumin seeds/Jeera - 2 tsp
- Dalchini - 1"
- Green/red chilli - as per taste
- Dry coconut
Preparation method
- Lightly cook the vegetables (one whistle if you are using a pressure cooker)
- Roast the above masala ingredients and grind to a fine paste. Add water as required.
- Head oil in a pan and add the vegetables and saute for a few seconds.
- Add the ground masala paste and cook with lid for about 5-7 minutes or until the oil leaves the edges of the pan.
- Cook for few more minutes, if required.
This dish is a delicacy and can be eaten with hot rice and ghee, or with chapatis too.
